INDIAN RECIPE OF THE DAY (October 26th 2006): Spicy Cutlet (Indian Snack)

Ingredients:
finely chopped Vegetables inc. 2 cups carrots/Beans/Cabbage, 3 potatoes boiled & mashed, 1/2 cup fresh green peas, 2 chopped onions, 2 tsp. green chili and ginger paste, 1 tsp. garam masala powder, salt to taste, 5 slices bread, 1/2 cup rusk powder, oil


Method: 1. Steam the chopped vegetables & peas in a pressure cooker. 2. Heat oil in a pan. Fry ginger & green chili paste for few minutes and add onions fry until golden brown. 3. Then put the mashed potatoes, steamed vegetables and fry for 10 minutes. 4. Mix garam masala & salt to the vegetables and saute well. Remove from heat and let it cool. 5. Dip the bread slices in water one at a time, take this out from water immediatly and squeeze out the excess water. 6. Put this in the vegetable mixture, add 1/4 cup of rusk powder and mix well. 7. Make lemon sized balls out of this mixture. coat with rusk powder. Flatten this into thin patties. 8. Heat 2 tbsp. of oil in a shallow frying pan and fry few cutlets at a time until both sides becomes brown (turn it once). Repeat this until all the cutlets are fried (Pour some oil every time you replace the cutlet). serve hot. and green chutney (mint) & tomato sauce makes a good accompaniment.
