INDIAN
RECIPE OF THE DAY (October 27th 2006):
Mango Chutney
by Heather
Ingredients: 1 cup distilled white vinegar, 3 1/4
cups sugar, 6 cups peeled sliced green mangos (about
10 med.), 1/4 cup peeled freshly grated ginger root,
1 1/2 cups raisins, 2 chile peppers seeded and finely
chopped, 1 garlic clove, 1/3 cup sliced onion, 1/2 tsp.
salt
Method: 1. 1: Boil vinegar and sugar in a
large pot for 5 min. 2. Add
remaining ingredients and cook about 30 min. or until
thick 3. Pack into clean hot jars, leaving 1/2 inch
head space and seal 4. Process in boiling water bath
for 15 min. (yields 8 half pints) BON
