INDIAN
RECIPE OF THE DAY (November 6th 2006):
Coconut Burfi (Dessert)

Ingredients: 1 cup grated coconut, 1 cup milk,
3/4 cup cashews, sugar same amount as coconut, 1/4 cup
ghee, 2 peeled and pounded cardamoms, butter for spreading
Method: 1. Soak cashews in hot water for
1/2 an hour. 2. Grind grated coconut and soaked cashews
coarsley with milk, and measure the same amount of sugar
and keep it aside. 3. Cook the ground mixture in a pan,
and keep stiring it. 4. Add sugar, and ghee and keep
stiring until it becomes a fine paste. 5. Fry cashews
in ghee and add it to the above. Pound cardamoms and
mix it with the above. 6. Now pour it on a buttered
plate and spread it evenly. 7. Let it cool for sometime,
and cut it into small burfi's. BON
