INDIAN
RECIPE OF THE DAY (November 9th 2006):
Coconut Chicken

Ingredients: 1 kg chicken cut into medium sized
pieces, 1 tbsp. ginger paste, 1 tbsp. garlic, 1 large
onion, 1 tbsp. chilli powder, 11/2 tsp. garam masala,
pinch of turmeric, 1/4 cup thick coconut milk, 2 tbsp.
oil, salt to taste
Method: 1. Clean the chicken. 2. Heat oil
in a pan chop the onion finely and add it to the oil.
3. Fry the onion till translucent. 4. Now add the ginger
garlic paste fry for 3 minutes and add the chicken,
salt, turmeric and chilli powder. 5. Cook it on medium
heat for 15-20 minutes till the chicken is done. 6.
Now add the coconut milk and mix well and cook for 5-6
minutes till the curry becomes nice and saucy. 7. Add
the garam masala and cook for 5 more minutes and turn
the heat off. best served with tangy vegetable biryani.
