INDIAN RECIPE OF THE DAY (September 18th 2006): LAMB CURRY

Ingredients:
2-3/4 Tbs. vegetable oil, 1 diced onion, 2 minced cloves garlic, 2-3/4 tbsp. Indian curry paste, 2 tsp. turmeric, 1 lb. diced lamb leg steaks, 2 cups coconut milk, 1 tsp. brown sugar
1 juiced lime or lemon, 1/3 cup plus 3 tbsp.chopped roasted peanuts, 1/4 cup chopped cilantro leaves


Method:
1. Heat oil in a heavy nonstick skillet over medium high heat. 2. Sauté onion and garlic 1-2 minutes. 3. Add curry paste and turmeric and sauté until fragrant. 4. Add lamb and cook 2-3 minutes until browned. 5. Stir in coconut milk and simmer 20 minutes or until meat is tender. 6. Stir in brown sugar, lime or lemon juice and peanuts. 7. Sprinkle with cilantro before serving.
