INDIAN RECIPE OF THE DAY (November 21st 2006): Beef Madras

Ingredients:
1 tbsp. of oil, 3 lb of beef cut into cubes, 10 fl oz of coconut milk, 16 fl oz of beef stock, PASTEL 1 tbsp. coriander seeds, 1 tbsp. cumin seeds, 2 red chillies seeded and chopped, 12 fresh curry leaves (or 6 if you can only get dried), 2 cloves of garlic, 1 tbsp. lime juice, 1 tbsp. brown sugar, 3 tbsp. water


Method: 1. Make the Paste by put everything in a processor and mixing until you get a paste. 2.
Heat the oil in a pan. 3. Add the paste and cook for 1 minute. 4. Add the beef cubes, stir to make sure they are all covered in paste and cook until browned. 5. Add Coconut milk and beef stock. 6. Simmer for about 1 hour.
