INDIAN RECIPE OF THE DAY (December 4th 2006): Coorgi Pork (Hot)

Ingredients:
3lb pork pieces, 30 dry red chillies, 12 onions small to medium, 1 tbsp. cumin seeds, 1½ tsp. turmeric, 3 tbsp. ground coriander, 1 tbsp. peppercorns, 3 tbsp. vinegar, salt to taste, 4 medium potatoes


Method: 1. Mix the pork with the ground chillies and salt. Marinate for about 15 minutes. 2. Slice 10 onions and cook in a saucepan with the pork and a little water. Cover the pan as this preserves the flavour. 3. Allow to simmer for about 30 minutes, until the meat is tender. 4. Grind the 2 remaining onions, cumin seeds, turmeric, coriander and pepper, and stir into the meat. 5. Blend in the vinegar and continue cooking for a further 15 minutes. 6. Add the boiled potatoes, peeled and cut into cubes. 7. Cook for a few minutes and serve hot. 8. Garnish with some freshly chopped coriander.
