INDIAN RECIPE OF THE DAY (December 6th 2006): Fish Masala

Ingredients:
1 lb. white fish (skinned & cut into chunks), 2/3 cup grated coconut, 1 chopped large onion, 2 chopped tomatoes, 1 tbsp. grated ginger, 1 chopped green chilies, 1 tsp. red chili powder, 1/4 tsp. turmeric powder, 1/4 tsp. fennel seeds, 4 tbsp. juice of tamarind, 5 curry leaves, salt to taste, 5 tbsp. oil


Method: 1. Heat the oil in a pan and fry the coconut, fennel seeds and 3/4 of the onion until golden. 2. Add chili powder and turmeric powder and stir-fry for a minute. Grind this in a food processor. 3. Fry the remaining onions until golden brown. Remove from oil and set aside. 4. Heat the tamarind juice in a pan over low heat.  5. Add the ground spices, ginger, green chili and tomatoes. When the mixture starts boiling add the fish and salt. 6. Cook for 10-15 minutes or until the fish is tender. 7. Now add the fried onions and sprinkle the curry leaves. serve hot.
