INDIAN RECIPE OF THE DAY (December 15th 2006): Indian Lentil Vegetable Soup

Ingredients:
3 tbsp. vegetable oil, 2 medium onions chopped, 2 cloves garlic minced, 1 tbsp. ground cumin, 2 tsp. ground coriander, 1/2 tsp. turmeric, 1/4 tsp. cayenne pepper, 2 cup red lentils, 1 picked over and rinsed, 8 cups water, 35 oz canned whole plum tomatoes drained and chopped, 1 1/2 cups peeled & chopped potatoes, 1 cup. chopped carrots, 2 tsp. salt, 1 freshly ground black pepper to taste


Method: 1. In large pot, heat oil over medium heat. 2. Add onions and garlic and cook, stirring often, until onions are softened, about 5 minutes. 3. Stir in cumin, coriander, turmeric and cayenne. 4. Add lentils and water. Bring to a boil. 5. Reduce heat and simmer, partially covered, for 15 minutes. 6. Add tomatoes, potatoes and carrots and simmer, partially covered, until vegetables are tender, about 20 minutes.
